About this recipe
This hands-off salmon dinner combines crisp-edged potatoes, tender green beans and savory lemon-garlic fish. Potatoes roast first because they need more oven time than salmon.
Why the potatoes go in first
Cut the potatoes into similar ¾-inch pieces, spread them cut-side down and allow a head start in the hot oven. Adding the fish from the beginning would risk overcooking it before the potatoes become tender.
Make salmon without a sugary glaze
Lemon, garlic and thyme provide a fresh finish instead of the honey-based pan sauce used in another recipe on this site. Check the thickest part of each fillet with a thermometer; 145°F is the recommended safe temperature.
