About this recipe

A layered celebration dessert with a source-based formulation and an English preparation guide. Ingredient ratios and pan sizes were checked against the credited recipe; Best Quick Recipe has not independently baked this version. The image is an AI-generated illustration, not a photograph of a tested batch.

A bright berry cake without a jelly insert

Here the blueberries are baked directly into the lemon sponge. The filling is cream-cheese frosting, so there is no separate fruit gel or mousse to freeze. This makes it more approachable than the pistachio entremets while still giving distinct layers in each slice. Pick this cake when fresh berries are available and you want a fruit dessert that can be assembled on the day after the layers have cooled.

Keep the batter quantities together

This card uses a formulation containing both butter and oil. Do not combine a butter quantity from an older saved recipe with the oil in this one. Follow the single ingredient list from start to finish. Set the extra tablespoon of flour for coating berries in its own small bowl so it is not accidentally counted as part of the 375 g flour. Zest the lemons before squeezing them, and measure the juice separately from the zest.

Before you start: weigh and organise

Read the whole card before opening the ingredients. Set out one bowl for each component and label similar-looking quantities, especially sugar and cream. Weigh in grams where a weight is given; use level measuring spoons for small amounts. A tablespoon means 15 ml and a teaspoon 5 ml. Prepare the specified pans before mixing. Check that your cooling rack, cake board and refrigerator shelf have enough room for the finished cake. Keep eggs and dairy out only as long as needed for preparation.

A photograph is a guide, not a doneness test

The illustration shows the intended style, but it cannot tell you whether your actual cake is cooked or its filling has set. Use the checks in the instructions. Oven settings, pan material and the size of your eggs can change a baking time. Check near the beginning of the stated range and avoid opening the oven repeatedly. A skewer should test sponge, not a pocket of fruit or melted chocolate. Never taste uncooked batter containing raw flour or eggs.

Ingredient requirements and allergens

There is no gelatin, pork or alcoholic drink in this formulation. Where vanilla or coconut flavouring is listed, use a product explicitly labelled alcohol-free rather than ordinary alcohol-based extract. Check packaged chocolate, wafers, cream cheese and flavourings for ingredients suitable for your needs. The recipe is not a halal certification. It contains eggs, milk and wheat unless otherwise indicated; read every label for additional allergens and cross-contact information.

Portioning and serving

Place the cake on a firm, level serving surface. Use a long sharp knife and wipe the blade between cuts; warm water helps clean it, but dry the blade before the next slice. Serve small portions of a rich celebration cake and return the rest to the refrigerator promptly. Keep refrigerated at 4°C / 40°F or below. For home preparation, this guide uses a conservative two-day refrigerated storage recommendation. Use a covered cake box so the filling is protected from strong refrigerator odours.

Useful checks when decorating

Choose a plate wider than the cake so you can move the spatula around the sides without scraping the rim. Divide the available frosting roughly before assembly, reserving enough for the outside. If cake crumbs appear in the frosting, avoid repeatedly dragging the spatula across the same spot. A light coat is appropriate here. Use a few berries or lemon slices for a simple finish rather than adding a second unmeasured filling.

Instructions

9 steps
  1. Heat the oven to 350°F / 177°C conventional. Grease three 8-inch / 20 cm round pans, line their bases and lightly grease the paper. Wash the blueberries, drain and dry carefully.

  2. Beat 113 g butter until creamy. Add both sugars and beat about two minutes. Add the oil and continue beating about three minutes until lighter. Mix in the eggs and cake vanilla, scraping the bowl so the mixture is evenly combined.

  3. Whisk the 375 g flour, baking powder, baking soda and salt in another bowl. Mix these dry ingredients into the butter mixture briefly on low speed, then add the buttermilk, lemon zest and lemon juice. Stop as soon as the batter is combined.

  4. Toss the blueberries with the separate tablespoon of flour. Fold them into the thick batter with a spatula, using broad gentle strokes rather than an electric mixer.

  5. Divide evenly between the three prepared pans. Bake 22–26 minutes, testing the centre with a skewer for clean cake crumb rather than a wet blueberry. Let the cakes cool completely in their pans on racks before removing and assembling.

  6. For the frosting, beat the cream cheese and 113 g butter together for about three minutes until smooth. Add icing sugar, cream, frosting vanilla and a pinch of salt on low speed, then beat about three minutes until creamy.

  7. Trim any domed tops from the cold cake layers. Place the first layer on a firm plate and spread with an even portion of frosting. Add the second cake and another frosting layer, then the third cake.

  8. Use the remaining frosting for a light coating over the top and sides. This is not a batch designed for a very thick coating or elaborate piped decorations.

  9. Refrigerate the assembled cake for at least 45 minutes before cutting. Optional extra lemon slices or berries are decoration, not part of the measured batter quantities. Keep refrigerated and use within two days under this site’s conservative storage guidance.

Cooking note: Cooking times are estimates. Follow safe food-handling practices, check doneness with a food thermometer when appropriate, and always review ingredients for allergens.

Helpful cooking tips

Frequently asked questions

Do I need a frozen blueberry insert?

No. Fresh blueberries are folded into the sponge batter.

Can I use cream cheese spread from a tub?

Use full-fat block-style cream cheese as listed. Softer spreads can make a different frosting consistency.

Can I replace the lemon juice with water?

No. The liquid and acidity are part of this formulation; changing them requires a separately checked recipe.

Why must the assembled cake chill?

The minimum 45-minute chill helps the filling firm up before the cake is cut.

Are these quantities from the older version?

No. This card uses the updated source quantities with both butter and oil.
